Get it good and hot, around 200°c with a gentle fire and some embers in the back of the oven.
Place a DeliVita cast iron tray in the oven to warm up.
- Place the burger in the warmed pan and pop into the oven, turning occasionally until a nice seared crust forms.
When the burger is almost up to temperature (60°c internal for medium 70°c for well done), place a slice of cheese on top and put it back in to melt; I went for American-style cheese squares.
Pop into a toasted bun with condiments of your choice.
